A healthy, hearty meal doesn’t have to be complicated, and it certainly doesn’t have to be expensive. Here’s a budget-friendly vegan crockpot meal that you can whip up with simple ingredients in no time flat.
[Ingredients]
Large bell peppers
Brown rice (cooked)
Frozen corn or peas (or both)
A can of rinsed black beans
Canned crushed tomatoes
Fresh garlic clove, minced
Red onion, chopped
Black pepper and sea salt
Cumin powder
Non-stick cooking spray
[Directions]
[1] Halve peppers, remove seeds, and rinse
[2] Mix brown rice, frozen corn or peas, black beans, garlic, onion, cumin, salt, and pepper
[3] Stuff peppers with mixture
[4] Spray crockpot with non-stick cooking spray
[5] Cook peppers in the crockpot on high for 2 hours
[6] Then, add crushed tomatoes, and cook for another hour
[7] For the last ten minutes, turn off the crockpot and remove the lid
