I can’t imagine life without pizza. Actually, I ‘m sure I can, but I just don’t want to.
But pizzeria pizza is oily, full of fat (not the good kind), and usually made with less-than-premium ingredients. Thanks to Shannon Vetere of SkinnySometimes.com, we can make healthy pizza at home without a ton of fuss, muss, or time.
You have 4 minutes for healthy with this 4 Minute Vegetarian Pizza Wrap!
[Ingredients]
1 small zucchini, sliced lengthwise
2 tbsp chopped onion
1/4 cup sliced mushrooms
2 tbsp black olives
1 – 10″ whole grain tortilla wrap
1/4 cup part skim mozzarella cheese
2 – 4 tbsp marinara sauce
[Directions]
[1] Place zucchini, onion and mushrooms into a small bowl. Run your fingers under water quickly and flick some water on top of the vegetables.
[2] Microwave for about 2 minutes until vegetables are soft. Drain excess water.
[3] Lay the tortilla on a flat surface. Top with drained vegetables, olives, sauce and cheese. Wrap it up and toss it back into the microwave for an additional minute or until the cheese is melted.
[4] Serve and enjoy!
[Tips]
[1] For just one quick serving, pick up what you need at your store’s salad bar. This way you won’t have any leftovers.
[2] You can freeze any extra marinara sauce in ice cube trays for servings at a later date.
[3] Tortillas freeze well, too. To eat one at a time while storing them in the freezer, place parchment paper in between each tortilla. Then just toss in the microwave for 10-20 seconds to bring to room temperature.
[4] If you want to eat this all week long, just buy larger quantities and chop everything up the week before. Pack your vegetables together in the fridge for grab-and-go options on busy weekday mornings.
