There’s an awesome challenge hitting the field this football season, and I know you’ll want in. I want you to join me in making your family’s Monday nights meatless all season long.
You may look at this and say, “Been there, tried that, and everyone hated it,” but I promise you that there are delicious alternatives to all your favorite meat and dairy favorites.
I’m not a fan of food that falls flat in the taste department, and I need a lot of energy throughout my day (especially being a mom of 5 children). Through years of practice, trial, and error, I’ve learned the best way to get energy (and satisfy my tastebuds) in a healthy way.
Eating a Plant-Based Diet is the Answer
I’m an active mom. I meditate, practice yoga, run more than one business, and chase my kids around all day long. I’m not going to let anything get in the way of me finishing my giant daily to-do list. I don’t have time for low-energy – or worse – getting sick.
Nutritionally dense plant-based foods have been proven to provide the human body with more abundant and higher quality energy pound for pound, calorie for calorie than animal product-based foods (and they’ll keep your wallet and the environment greener, too).
Plus, there are many long-term health benefits from eating a plant-based diet (even if it’s just one night a week). The practice of regularly choosing plants over meat and dairy has been scientifically proven to lower blood pressure and cholesterol, reduce the risk of heart disease and stroke, limit the risk of many types of cancer, reduce the onset of type 2 diabetes, and help curb obesity. Plant foods also contain amazing antioxidants that assist in anti-aging, which helps us moms (and dads) look younger. And who doesn’t want to look younger?!
Your Meatless Monday Night Made Easy
I already told you how busy I am, which means I have zero time for complicated recipes or meal-planning. The kitchen is not my domain, and cooking is not one of my core talents – I’m cool with that. What I am a big fan of are quick and easy recipes, so here are two of my favorite plant-based, dairy-free vegan recipes, created for you with love by Shannon Vetere of SkinnySometimes.com exclusively for my BexLife readers.
