~ Vanilla Walnut Milk Recipe ~
1 C Raw Walnuts Nuts
¼ C Raw Pine Nuts
4 ½ C Water
2 pinches of Celtic Salt
4 Medjool Dates (pitted)
½ Vanilla Bean or ½ tsp vanilla extract
1. Soak the walnuts, pine nuts with enough water to cover overnight.
2. Drain the nuts and add to a blender or vitamix and 1 C of water.
3. Blend the mixture on high until it becomes a smooth paste. Then slowly add the remaining nut milk and blend until you have a smooth milk.
4. Straining the milk: Strain the entire mixture through a basic strainer, pressing the pulp with a spatula. Discard the pulp. Next, strain the milk through a nut milk mesh bag.
5. Split the vanilla bean down the center and scrape out the seeds. Remove the pits from the dates.
6. Add 1 C of milk, the dates and the bean scrapings and salt back into the blender. Blend it until smooth then add in the rest of the nut milk. Strain again through the basic strainer to remove date skins.
7. Stir the strained milk and drink it up.
8. Keeps 2-3 days in the refrigerator.
